Summer squash, known as yellow squash in some parts of the country, is a versatile, super nutritious vegetable. Summer squash is high in vitamins A, B6, and C, folate, magnesium, fiber, riboflavin, phosphorus and potassium.

You may be used to eating squash in a traditional casserole dish, overcooked and drenched in butter. But if prepared correctly, squash can be good for you. Give these squash recipes a try.

Simply Grilled Squash

Combine all ingredients in a mixing bowl. Evenly coat the squash pieces with oil, salt and pepper.

Assemble the seasoned squash pieces onto skewers and place on indoor or outdoor grill. Cook until tender and brown.

Sauteed Summer Squash

Slice onion and separate into individual rings. In a heavy skillet, heat oil. Add onions and cook until translucent. Add squash and seasonings. Cover and simmer until tender.
