Why Start Your Own Garden?

In a recent report, studies show that the nutrient content of fruits, vegetables, and grains have experienced a measurable decline in recent decades. Yahoo News says, “One study published in the Journal of the American College of Nutrition analyzed 43 different garden crops (mostly vegetables) and found “statistically reliable declines” in six key nutrients — protein, calcium, phosphorus, iron, riboflavin and ascorbic acid — since the 1950s. The biggest drop (38%) was in riboflavin.”
According to researchers, a phenomenon called “nutrient dilution” is to blame. Along with pollution, certain farming practices, including monocropping (growing one type of crop) and the use of synthetic fertilizers take essential minerals out of soil.
