If you’ve never made tofu, preparing bean curd is a simple way to experience this protein-rich food. Prepared in thin sheets, bean curd is pressed soy beans, resembling thin layers of phyllo dough. When cooked, it has the flavorful, hearty texture of your favorite comfort meal.

Ingredients:
1 package of bean curd, ripped into pieces (you can find bean curd sheets at any Asian food market)
1 cup of nutritional yeast
1 small red onion, chopped
1 small green bell pepper, chopped
1 package frozen mixed vegetables
4 cups water
2 tbsps. flour
2 tbsps. Spike seasoning
Olive oil

Directions:
Heat oil in a heavy pot. Add onion and bell pepper and saute until tender. Add flour and nutritional yeast to make a rue. It will be crumbly. Add water and stir. Add mixed vegetables, Spike and bean curd. Let simmer for 20-30 minutes. Add more seasoning to taste.

Serve with rice and/or cornbread.
